Souvlakia (Skewered and Grilled Lamb)

Ingredients

⦁ 2 lemons, zested and juiced
⦁ 6 oz olive oil
⦁ 0.5 oz garlic cloves, minced
⦁ 1 tbsp minced fresh oregano
⦁ 1/2 tsp salt
⦁ 1/2 tsp freshly ground black         pepper 

⦁ 2 lbs leg of lamb, cut into 1-         inch cubes
⦁ 1.5 lbs green peppers, cut into     32 squares
⦁ 1 lb yellow squash, cut into 32     slices
⦁ 1.5 lbs pearl onions, peeled           (about 32 onions)
⦁ 16 12-inch metal skewers             (or soaked wooden skewers) 

Preparation

1. Prepare the Marinade: In a mixing bowl, whisk together lemon juice, zest, olive oil, garlic, oregano, salt, and pepper until combined.

2. Assemble the Skewers: Alternate lamb, green peppers, squash, and pearl onions on each skewer, using about 3 pieces of lamb and 2 pieces of each vegetable per skewer.

3. Marinate: Lay skewers flat in a shallow dish. Pour the marinade over them, ensuring all ingredients are evenly coated. Let sit for at least 1 hour.

4. Grill the Souvlakia: Preheat the grill to medium-high heat. Grill the skewers, turning occasionally, until lamb reaches your desired doneness (medium-rare typically takes about 10–12 minutes).

5. Serve: Plate the skewers with tzatziki, warm pita bread, and a side of lemon potatoes.
