Ingredients

For the Crust:

⦁ 5 ½ cups all-purpose flour,         sifted
⦁ 1 teaspoon salt
⦁ ⅓ cup Crisco shortening
⦁ ½ package active dry yeast
⦁ 1 teaspoon sugar
⦁ 3 tablespoons lukewarm               water (for yeast activation)
⦁ 1 ½ cups warm water (for            dough mixing) 

For the Cheese Topping:

⦁ 1 lb dry curd cottage cheese
⦁ 2 oz bleu cheese
⦁ 1 large or 2 small sweet                   yellow onions, finely chopped
⦁ 1 ½ tablespoons tomato paste
⦁ ¾ teaspoon ground cumin
⦁ ½ teaspoon paprika
⦁ 1 teaspoon crushed oregano
⦁ ⅓ cup olive oil
⦁ ½ teaspoon paprika 

Preparation


1. Start the Dough: In a large mixing bowl, combine the sifted flour and salt.

2. Prepare Yeast Mixture: In a small bowl, dissolve yeast and sugar in 3 tablespoons of lukewarm water. Let stand for 5-10 minutes.

3. Combine Ingredients: Add the yeast mixture to the flour, mix in Crisco, and gradually add enough warm water to form a dough.
